What can be scarier than cutting into the first block of cheese you ever made....if you don't count the goat's milk ricotta that was my second attempt ;[)
I had been hoping to wait till Tad and Rita got here to cut into it, but I noticed some mold growing on one of the areas that the wax had fallen off. Best bet was to trim it off. Guess I'll have to start eating it now, darn the luck...
Maybe tomorrow night I'll cut it completely in half and re-wax the other portion for later.
